Coca crujiente de boquerones

– 200 gr. of anchovies – 200 gr. of puff pastry
– 2 ripe tomatoes
– 1/2 onion
– 1 lemon
– Fresh basil – Pepper
– Olive oil – Salt

Clean the anchovies, desspinar and marinate them for 2 hours with lemon, olive oil, and salt. Stretch the puff with a rolling pin until it is very thin, pierce it with a fork and bake at 180 o C, placing weight on top so that it is crisp and flat. Toss the tomatoes, cut them

in slices, seasoning, and baking. Poach the onions over low heat and season with salt and pepper. Place the tomato, onion, and anchovies on the puff with the skin in sight. Bake the set until browned. Grind the basil with olive oil and season with the resulting oil.
