Recipes for 4 peoples
· For the broth:
1.5 kg. of trash,
2 heads of garlic, olive oil, and water.
· For the rice:
200 gr. Sepia
100 gr. of monkfish,
300 gr. of prawn from Dénia,
350 gr. of rice, squid ink, oil
of olive, saffron, salt, paprika, and parsley.
Prepare trash broth previously. In a paella pan, sauté with olive oil the chopped cuttlefish, pieces of monkfish and the peeled prawns of Dénia. Add grated natural tomato, and a chopped garlic and parsley. Add the rice and a spoonful of sweet paprika.
Saute with the sofrito. Add the broth of the whitebait, a pinch of saffron, season, dilute the ink of the squid and let it boil over medium heat until the rice is in its point and dry (approximately 20 minutes)
