Coca de anchoas
Recipe for 4 people
Ingredients
– 200 gr. of salted anchovies
– 400 gr. of wheat flour-corn
– Yeast
– Olive oil – Salt
– Water (125 ml
or half a glass)
Preparation
Dissolve the yeast in warm water. Prepare the dough with the two well-mixed flours, oil, salt, and yeast. Let stand 30 minutes, then prepare balls of dough with your hand and flatten with a rolling pin to shape the base
of coca. Add two anchovy fillets for each coca, previously desalinated and desespinados. Bake at 200o C until the cocas are golden brown.
