Marinated broth rice ( Arroz caldoso marinero )

· 1.5 kg. of whitebait · 4 ñoras
· 2 heads of garlic
· 2 tomatoes
· 400 gr. of prawn from Dénia
· 100 gr. sepia
· 200 gr. of scorpa
· 200 gr. of monkfish
· 300 gr. of rice Bomba · Olive oil
· Saffron
· Salt
· Sweet paprika
· Parsley
· Water

In a large pot, sauté with olive oil, 4 ñoras and 2 heads of garlic. Once sofrito we add 1.5 kg. of fish-trash and 3 liters of water. Leave to cook over medium heat until boiling. Crush the fish, strain the broth and set aside. In a cauldron stir fry with olive oil, the prawns of Dénia whole, the cut monkfish, the chopped cuttlefish
and backs of scorpa. We add to the sofrito a mince of garlic, parsley, grated natural tomato and a pinch of sweet paprika. Add the rice, stir with the sofrito, add the broth of the whitebait, a pinch of saffron, season and boil over medium heat about 20 minutes. (The rice at its point and with excess broth)
