· Seabass for four people (approximately 2 kg)
· Sufficient fat salt to cover (3 kg.)
· Olive oil
Clean the sea bass inside and remove scales. In a baking tray, we place a salt mattress, put the sea bass and cover completely and moisten the salt. With the preheated oven we introduce the sea bass for 35/40 minutes at approximately 180o (for each kg of fish, 20 minutes at 180o). A blow is given to release the salt. The loins are served with a little olive oil on top.
