Tomato ( Tomacat )

Recipe for 4 peoples

– 200 gr. of “Sangatxo” – 3 green peppers
– 2 eggplants
– 5 large tomatoes
– 4 cloves of garlic
– Olive oil
– Water (125 ml or half glass)
– Sal

To clear the “sangatxo” during 5 hours changing the water several times, to drain and to reserve. In a cauldron, chop the peppers cut into strips, the eggplant cut into pieces and the garlic, without getting browned. Peppers once fried must be covered with paper
Cooking for 15 minutes (this will make it easier to peel them). Peel the tomatoes and remove the seeds. Put everything in the kettle and add the “sangatxo”, a little water, grind salt and simmer for 30 minutes.
